not-so-copycat orange chicken

A little about myself: my name is Essie, I'm fifteen, and somehow, I got hooked on finding (and making) food recipes on Pinterest. Because you can write so little about certain recipes on that website, I decided to make a blog about my tested recipes. Here's my Pinterest, go there for more food inspiration. :)

without further ado, my not-so-copycat Panda Express chicken.

ingredients
 - 1/2 bag tyson grilled chicken (already cooked, the small bags you get in the refrigerated section near the already made deli meat), chopped
 - chopped or shredded veggies/cool fruits (i tried celery and it tastes great, but pineapple and peppers would taste good too)
 - 1 large orange (to get 1/4 tsp. zest from [and juice])
 - 2 tsp. corn starch (or 2 tbsp. flour)
 - 3 tbsp. sugar
 - 2 tbsp. soy sauce
 - 1/4 cup rice wine vinegar (or red wine vinegar)
 - 1 cup instant rice (or regular rice, and have a microwave rice cooker thing)
 - olive or vegetable oil for stir-frying

directions
 1. on a plate, either zest the orange or cut shreds of peel off with a knife, being careful not to add the bitter white stuff. if you cut shreds of peel off, very finely dice it. (maybe on the same plate) dump half a bag of the precooked chicken, and dice to bite-sized pieces.
 2. in a bowl, juice the orange. add corn starch, sugar, soy sauce, orange zest, and rice wine vinegar. this will settle; stir before use. set aside.
 3. pour some oil in a frying pan, and bring to medium heat. add the veggies/fruit of your choice, and stir fry on medium-low heat until almost cooked through. set aside (perhaps on the plate you zested your orange on).
 4. cook rice according to package directions.
 5. dump sauce into frying pan. stir almost constantly, as this will try to settle. cook until thickened (and steam is coming off), then stir in the chicken and fruits/veggies.
 6. place rice in a serving bowl and pour sauce mixture over it. serve immediately.


this is a really sweet orange chicken recipe. i suggested some veggies and pineapple up there, but i think that most asian vegetables (as well as carrots and broccoli) would also work. the original recipe calls for hot sauce, which i don't have, and that might make it less sweet. nonetheless, enjoy!
